I am a proud Omnivore (look closely at my I heart Pork tshirt) always trying to re-convert Heather, who is a die-hard herbivore and vegan extraordinaire. So after many a dinner out, we decided to meet in the middle and share with you what we come up with—creating delicious, upscale but easy to make recipes that will satisfy both ends of the spectrum. We have many plans in store for you all, but today we made Vegan Thai Coconut Curry Soup with Gluten-Free Sweet Potato Dumplings. I am very proud of what we made, and today’s success along with Heather’s encouragement helps me get over the anxiety of actually considering, much less eating, something that’s vegan and gluten-free. This is a fun challenge that I am ready to take on.
